It started with one flavour on a café shelf
The Irish Kefir Co. began as a single bottle of lemon and ginger, made by hand in a kitchen in Ballinrobe for the people who came through the door. It’s still made the same way. There are just four of them now.
Before it had a name
The kefir wasn’t the plan.
Marina Murphy was already making things by hand in Ballinrobe - breads, pastries, small-batch food for a café in a market town in Co. Mayo. Fermentation came in the way it usually does: as curiosity about something old, made properly, that most people had only ever met in a supermarket version of itself.
The first batch was lemon and ginger. It sat on the shelf beside everything else. People started coming back for it specifically, and then coming back for more than one, and then asking whether they could take a case.
That’s the whole origin. No launch, no plan. Just a jar on a counter that turned out to be the thing people wanted.

Marina trained in culinary arts and pastry, and spent years in kitchens before any of this. That background is why the kefir tastes the way it does - the interest was never in a formula, it was in the process. What happens to a thing over time. What changes if you leave it alone and let it work.
She founded Balance You Foods and opened its café in Ballinrobe, building it from a kitchen table into a business by hand and in small batches. Everything that came out of it was made the way she’d been taught to make food: real ingredients, short lists, nothing rushed to hit a number.
The kefir was one part of that, and for a long time it stayed one part.

Why it got its own name
By the time there were four flavours, the kefir needed more room than a café shelf and more of an identity than a line on a menu.
The Irish Kefir Co. is that room. Same kitchen, same people, same standards - the parent company is still Balance You Foods and the café is still on Church Lane. What changed is that the kefir now has a name of its own, and everything that goes with it: four flavours, a fixed method, and a bottle that says where it’s from.

Ballinrobe sits at the top of Lough Mask, in the part of Mayo where the fields are divided by stone walls and the weather arrives before it’s announced. It’s a market town. It has been for a long time.
Everything is made and bottled here. Not blended elsewhere. Not produced under contract. Not shipped in and labelled.
The cultures live in this building. Every batch is filled in this building.
Four days
Every batch takes 96 hours, and the four days are the product.
Live kefir cultures go into sweetened water with organic fruit or root. They feed on the sugar. They produce acids, which is where the dry, tart edge comes from, and carbon dioxide, which has nowhere to go in a sealed bottle. That’s the fizz.
At four days it’s where we want it. It’s bottled and chilled, and nothing is heat-treated at the end - because heat-treating a ferment undoes the four days that came before it.
It’s slower than it needs to be. It’s also the only way it tastes like this.

Water, organic cane sugar, live kefir cultures, and the fruit or root for that flavour. No artificial flavours, colours or sweeteners. No stevia, no sugar alcohols.
